recipe + illustration #1: creamy scrambled eggs with chervil

Serves 2

Ingredients:

2 eggs
1 oz. cream cheese, softened and cubed into 1/4" chunks
Sprinkle of baking powder
1/2 tsp. dried chervil (or to taste)
3/4 Tbs. extra virgin olive oil
1 shallot, diced
salt
freshly ground black pepper

Directions:

1. Lightly beat eggs, softened cream cheese, baking powder and dried chervil in a medium-sized bowl.
2. Heat 3/4 Tbs. extra-virgin olive oil over medium-high heat in small skillet.
3. Add diced shallot and cook until soft, about 2-3 minutes.
4. Once shallots are softened, add egg mixture to the skillet. Allow the eggs to slightly set around the perimeter of the skillet. Once eggs begin to set, use a spatula to pull eggs away from the outside of the skillet towards the center of the skillet. 5. Continue to let eggs set and pull them towards the center of the skillet until eggs are completely cooked through and soft. Scramble the eggs by breaking them apart with a spatula.
6. Top eggs with salt and pepper (to taste) and serve.

Bon appetit!
